Artichoke Chicken

This recipe is super easy and ridiculously good. I've even modified it from the original to make it healthy, too. It's like artichoke dip on top of chicken. I typically hate the taste of fat-free mayo, but it works great in this recipe because what it's doing is adding moisture to the chicken and binding the artichokes and cheese together.

1/2 cup fat-free mayo
1/2 cup parmesan cheese
minced garlic
pepper to taste
1 can artichokes, roughly cut (I've also used the frozen artichokes from Trader Joes and they're great, too)

Combine all ingredients and cover the chicken. Bake at 400 degrees for about 45 minutes, and enjoy. The ingredients as listed above are 6 weight watchers points, so then just figure out the size of your chicken and its points, and you have a pretty darn healthy and tasty meal.
