I adapted this recipe from one I saw online, and it's become a summer staple for us. It's wonderful over chicken or just with a spoon :-)
1 can corn, drained
2 cup diced tomatoes
2 cups diced avocado
6 T diced red onion
2 T finely chopped parsley
2 T olive oil
1 T lemon juice
1 t salt
Mix everything together and refrigerate for about an hour. Enjoy!
