I don't know where I found this recipe, but I am sure glad I did. These were so good! They were a bit time consuming for a week night, so next time I'd have everything chopped ahead of time.
Chicken Wraps
1 Tbsp canola oil
1 red bell pepper, chopped
1/2 large red onion, chopped
1 lb ground chicken breast
1 Tbsp peeled and chopped fresh ginger
2 c shredded carrot
Juice of 2 limes (about 1/4 cup)
1/4 cup chopped cilantro
2 Tbsp soy sauce
- Heat the oil in a large skillet. Add the onion and bell pepper and cook until lightly browned.
- Add the chicken and ginger and cook about 6 minutes, or until chicken is no longer pink.
- Add the carrot, lime juice and soy sauce. Cook until carrot is tender and liquid is reduced by half - about two to three minutes.
- Stir in the cilantro and remove from heat.
Sauce
3 Tablespoons peanut butter
5 Tbsp light coconut milk
2 tsp unseasoned rice vinegar
2 tsp honey
1 tsp Sriacha
1 Tbsp reduced-sodium soy sauce
Mix all ingredients together. You can also add in some coarsely chopped peanuts if you desire.
Place the chicken in the lettuce, add sauce and dig in!
